EASY TOMATO FETA SALAD

INGREDIENTS

·         3 pints grape tomatoes, red or mixed colors

·         2-3 tbsp red onions (diced) 

·         1/8 cup good white wine vinegar

·         6 tbsp extra virgin olive oil

·         kosher salt to taste (no more than 1/8 tsp) 

·         1/4 tsp ground black pepper

·         3 tbsp fresh basil leaves (chopped)

·         3 tbsp Italian flat leaf parsley (chopped)

·         3/4 cup feta cheese (diced or crumbled) 

 

HOW 

1)    Cut the tomatoes in half and place them in a large bowl. 

2)    Dice your onions and set aside

3)    Dice the feta into ½ inch cubes or, if you prefer roughly crumble and set aside

4)    Mix white wine vinegar, olive oil, salt and pepper

5)    Roll basil and cut into strips or chop and set aside

6)    Chop Italian flat leaf parsley and set aside

7)    Incorporate all ingredients into a large bowl and lightly toss

8)    Add your cubed or roughly crumbled feta cheese, light toss then serve
